It is in the final stage of processing that the coffee beans are perfected. This last processing step, in fact,  eliminates unsuitable beans of coffee, ensuring that only the best contribute to creating a tasting experience unique.

To carry out this important process, optical sorters are used which, depending on the signals detected by their optical system, control a pneumatic device which physically divides the product to be rejected from the one recognized as “compliant”. It is of fundamental importance to correctly weigh the “non-compliant” and rejected product to optimize production.
